Cinnamon Walnut Sweet Potato Soup

Ingredients:

  1. 2 tablespoons olive oil
  2. 1 small onion, diced
  3. 2 cloves garlic, chopped
  4. 2 teaspoons cinnamon
  5. 1/4 teaspoon nutmeg
  6. 4 sweet potatoes, peeled and cut into 1-inch cubes
  7. 1/4 cup walnuts, plus extra for garnish
  8. 4 cups vegetable (or chicken) broth
  9. salt and pepper
Directions:

In a large pot, heat oil over medium heat. Add onion and garlic and saute until translucent, about 5 minutes.

Add the cinnamon, nutmeg, sweet potatoes, walnuts and broth. Bring all ingredients to a boil then reduce the heat and simmer until the sweet potatoes can be easily pierced with a fork, about 30 to 35 minutes.

Using an immersion blender puree mixture until smooth. Or puree in batches using a blender. Season to taste with salt and pepper.

Garnish with walnuts and cinnamon powder and serve.
