Black Bean Quesadillas

Ingredients:

  1. 1/2 cup canned black beans, rinsed and drained
  2. 2 tablespoons mild chunky salsa
  3. 1 tablespoon chopped green onion
  4. 1 tablespoon chopped fresh cilantro
  5. 1 cup shredded pepper Jack cheese
  6. 8 (6- inch) flour tortillas
  7. 1 tablespoon butter
  8. 2 thinly sliced red chili peppers
Directions:

Mash beans slightly; combine with salsa, chili peppers, green onion, cilantro and cheese.

Divide mixture on 4 tortillas, spreading almost to edges. Top with remaining tortillas.

Cook quesadillas in buttered skillet on medium to medium-low heat until browned, 2 to 3 minutes on each side. Cut into wedges before serving.
