Sirloin Kabobs with Parmesan Orzo

Ingredients:

  1. 1 pound (1- inch thick) boneless beef top sirloin steak, cut into 1-1/4- inches pieces
  2. 1 red bell pepper, cut into 1- inch pieces
  3. 1 yellow bell pepper, cut into 1- inch pieces
  4. 1 Tablespoon chopped fresh basil or 1 tsp dried basil
  5. 1 Tablespoon Italian dressing
  6. 2 cloves (large) garlic, minced
  7. Parmesan Orzo:
  8. 1 cup uncooked orzo pasta, cooked according to package directions
  9. 2 Tablespoons chopped fresh basil or Italian parsley
  10. 2 Tablespoons shredded Parmesan cheese
  11. 2 teaspoons olive oil
Directions:

Soak eight 8- inch bamboo skewers in water 10 minutes.

Toss beef and bell peppers with 1 Tbsp basil, dressing and garlic. Thread beef and peppers alternately onto skewers.

Parmesan Orzo:
Mix cooked orzo, 2 Tbsp basil, parmesan cheese and oil in bowl; keep warm.

Place kabobs on grate over medium heat. Grill, uncovered, about 9 to 11 minutes for medium rare to medium doneness, turning occasionally. Serve with orzo.

To Broil:
Place kabobs on rack in broiler pan so surface of beef is 3 to 4- inches from heat. Broil about 9 to 12 minutes for medium rare to medium doneness, turning once.
