Tuna Salad Sandwich

Yield:
2 sandwiches

Ingredients:

  1. 1 can (6 ounce) solid white tuna, drained
  2. 1 teaspoon olive oil
  3. 1/3 cup cottage cheese
  4. 2 tablespoons mayonnaise
  5. 1/4 cup onion, finely chopped
  6. 1 stalk celery, finely chopped
  7. 1 tablespoon capers, drained
  8. juice from half a lemon
  9. 1/8 teaspoon dill
  10. 2 tablespoons fresh parsley, finely chopped
  11. 1 teaspoon Dijon mustard
  12. 4 slices multigrain Bread, lightly toasted
Directions:

Combine all ingredients together. Spread on two slices of toasted bread. Top with remaining toasted bread, cut each sandwich in half and serve.
