Pork Tenderloin with Red Pepper Sauce

Yield:
1 3/4 cups sauce

Ingredients:

  1. 1 cup chopped onion
  2. 1/4 cup olive oil
  3. 1 cup roasted red peppers, rinsed
  4. 3/4 cup sour cream
  5. 1 packet (1 oz.) Hidden Valley Original Ranch Salad Dressing and Recipe mix
  6. 2 pork tenderloins, cooked (about 1 pound each)
Directions:

Saute onion in olive oil until soft and lightly browned. Stir in roasted red peppers and heat through. Remove skillet from heat; stir in sour cream and dressing mix. Transfer warm mixture to food processor and puree until smooth. Serve warm over sliced pork tenderloin.
