Orange Rice

Yield:
Makes 6 servings.

A festive pilaf.

Ingredients:

  1. 1 can (6-oz.) frozen orange juice
  2. 2 1/2 cups water
  3. 1/4 teaspoon ground saffron
  4. 1 tablespoon Angostura
  5. 2 tablespoons butter
  6. 3 cups precooked rice
Directions:

In a 2-quart saucepan mix orange juice with water, saffron, Angostura and butter. Bring to a boil. Slowly stir in rice. Stir to blend well. remove from heat, cover, and let stand for 10 minutes. Stir with fork to fluff.
