Baby Arugula Salad with Tomato and Pinenuts

Ingredients:

  1. 3 1/2 cups baby arugula (about 5 ounces)
  2. 1 Tablespoon lemon juice
  3. 1 Tablespoon olive oil
  4. 2 roma tomatoes, cut into quarters
  5. 2 teaspoons pinenuts
  6. Parmesan cheese, shaved
Directions:

Place arugula in serving bowl and toss with lemon juice and olive oil.

Add tomatoes, pinenuts and parmesan cheese and serve.
