Spicy English Muffins

Yield:
4 sandwiches

A different way to top an English muffin!

Ingredients:

  1. 1 1/2 cups cottage cheese
  2. 1/2 cup wheat germ
  3. 2 Tablespoons chopped chilies
  4. 1/4 teaspoon basil, dried and crushed
  5. 1/4 teaspoon oregano
  6. 1/8 teaspoon salt
  7. 4 English muffin halves, toasted
  8. 4 tomato slices
  9. 4 cheddar cheese slices
  10. Minced parsley
Directions:

Combine cottage cheese, wheat gern, chilies, basil, oregano and salt and mound on English muffin halves.

On each muffin, place a slice of tomato and criss-cross with 2 strips of sliced Cheddar cheese.

Broil 3 to 4- inches from source of heat until cheese melts. Sprinkle with minced parsley.
