Oatmeal Pancakes

Every morning is a pancake morning!

Ingredients:

  1. 1 1/2 cups all purpose flour
  2. 1/2 cup quick or old fashioned oats, uncooked
  3. 2 teaspoons baking powder
  4. 1 1/4 cups milk
  5. 1 egg
  6. 1 Tablespoon olive oil
  7. Optional Stir Ins:
  8. 1 cup frozen blueberries
  9. OR 1 medium ripe banana
  10. OR 3/4 cup chopped apple
  11. mashed with 1/8 teaspoon ground nutmeg
  12. sprinkled with 1/2 teaspoon ground cinnamon
  13. 1 Tablespoon olive oil
  14. Serve with:
  15. Maple syrup
Directions:

In medium bowl, combine flour, oats, and baking powder; mix well.

In small bowl, combine milk, egg and oil, blend well. Add to the dry ingredients all at once; mix just until dry ingredients are moistened. Add one of the stir-in options, if desired.

Heat a large skillet over medium-high heat and add 1 tbsp olive oil. For each pancake, pour 1/4 cup batter into hot skillet. Turn when top of pancake is covered with bubbles and edges just begin to brown.

Serve hot with warm maple syrup.
