Pork Chops with Caramelized Apples

Yield:
Serves 4

Preparation Time:
and Cook Time: 20-25 min

Ingredients:

  1. 4 bone-in rib pork chops, 1 1/2 inches thick
  2. 2 teaspoons crushed dried thyme
  3. 1 1/2 teaspoons ground black pepper
  4. 1/4 teaspoon salt
  5. 6 Tablespoons butter
  6. 3/4 cup brown sugar
  7. 4 large apples, cored and cut into wedges
  8. Garnish with freshly chopped parsley
Directions:

1. Pat chops dry. In small bowl mix together thyme, pepper and salt; season both sides of chops; set aside.

2. In large heavy skillet melt the butter and sugar over medium high heat; add the apples and saute for 2 - 3 minutes on each side, until apples are barely fork tender and golden. Remove from heat and keep warm.

3. In same skillet over medium-high heat, add a little olive oil. Add chops and brown on one side, about 4 minutes; turn and brown other side, 4 minutes more. Keep turning chops every couple of minutes until just done (internal temperature will reach 150 degrees F). Total cooking time for chops will be around 8 to 12 minutes.

4. Serve chops with warm caramelized apples and sprinkle with fresh parsley.
