Herbed Sirloin Roast with Blue Cheese Sauce

Ingredients:

  1. Herb Bouquet:
  2. 1/4 teaspoon coarsely ground black pepper
  3. 1/2 teaspoon dry mustard
  4. 1/2 teaspoon dried rosemary, crushed
  5. 3/4 teaspoon dried oregano leaves
  6. 3/4 teaspoon dried thyme
  7. 2 1/2 pounds Certified Angus Beef sirloin tip center roast
  8. 1/4 cup balsamic vinegar
  9. Blue Cheese sauce:
  10. 1/3 cup blue cheese
  11. 2 teaspoons Worcestershire sauce
  12. 1 1/4 cups sour cream
  13. 1 teaspoon coarse ground black pepper
  14. 1 1/2 teaspoons chopped fresh chives
  15. 1/4 teaspoon celery salt
  16. 1/4 teaspoon sea salt
Directions:

Heat oven to 325 F.

Combine pepper, mustard, rosemary, oregano and thyme for rub.

Brush roast with balsamic vinegar and rub with Herb Bouquet. Roast, uncovered, for 1 hour and 10 minutes for medium doneness or 150 F. internal temperature. Remove from oven and let stand covered 8 to 10 minutes.

Combine blue cheese, sour cream, Worcestershire sauce, pepper, chives, celery salt and sea salt.

Slice roast and serve with blue cheese sauce.
