Spiced Applesauce

9 cups

Ingredients:

  1. 18 medium tart apples, peeled and quartered
  2. 1 cup apple cider
  3. 3/4 cup sugar
  4. 2 Tablespoons lemon juice
  5. 1 cinnamon stick
  6. 1 teaspoon ginger
  7. 1 teaspoon vanilla
  8. 1/2 teaspoon nutmeg
  9. 1/2 teaspoon mace
  10. 1/2 teaspoon cardamom
Directions:

Place all ingredients in large saucepan. Cover and cook over medium low heat for 40 minutes or until apples are tender. Remove from heat; discard cinnamon stick. Mash the apples to desired consistency. Serve warm or chilled.
