Minted Fruit Salad

Yield:
4 servings

Ingredients:

  1. 2/3 cup orange juice
  2. 1/3 cup water
  3. 1 cup instant rice, uncooked
  4. 1 can (11 oz.) Mandarin oranges, drained
  5. 1 can (8 oz.) crushed pineapple
  6. 1/2 cup cucumber, chopped
  7. 1/3 cup red onion, chopped
  8. 3 tablespoons fresh mint, chopped
Directions:

Combine juice and water in medium saucepan. Bring to a boil. Stir in rice; remove from heat; let stand 10 minutes. Stir together rice, drained oranges, crushed pineapple, cucumber, onion and mint in serving bowl. Serve chilled.
