Tomato And Goat Cheese Salad

Ingredients:

  1. Salad:
  2. 1-2 packages salad greens
  3. 16 ounces medium shell pasta
  4. 2 cups cherry tomatoes, halved
  5. 1/2 cup goat cheese, crumbled
  6. Dressing:
  7. 1/2 cup balsamic vinegar
  8. 1/2 cup red onion, chopped
  9. 1/4 cup olive oil
  10. 1 tablespoon fresh parsley, chopped
  11. 1 teaspoon Dijon mustard
  12. salt to taste
  13. pepper to taste
Directions:

Salad:
Keep salad greens in refrigerator until ready to serve. Cook pasta according to package directions; drain. Combine cooked pasta with tomatoes, and goat cheese in large bowl; mix gently.

Dressing:
Combine vinegar, onion, oil, parsley, mustard, salt and pepper; mix well. Add dressing to pasta mixture and toss well.

Serve over bed of salad greens.
