Cauliflower And Spinach Salad

Ingredients:

  1. 2 cups cauliflower florets
  2. 1 can (11 ounce) Mandarin oranges, drained
  3. 1/4 cup green pepper, chopped
  4. 2 large radishes, sliced
  5. 4 cups fresh torn spinach
  6. 1 can (5 ounce) evaporated milk
  7. 1/3 cup orange juice concentrate
Directions:

In a large bowl, combine cauliflower, oranges, green pepper, radishes and spinach. Pour milk in a small bowl; gradually whisk in orange juice concentrate. Drizzle over salad and toss to coat. Refrigerate leftovers.
