Mint Meringue Parfaits

Ingredients:

  1. 1 cup frozen whipped topping, thawed
  2. 1/8 teaspoon mint extract
  3. 2 cups chocolate ice cream
  4. 1/2 cup chocolate ice cream topping
  5. 8 mint meringue cookies, coarsely crushed
Directions:

In a medium bowl, combine whipped topping and mint extract; stir gently to blend. In each of four tall glasses, layer 1/4 cup ic cream, 1 tablespoon chocolate topping, 1 tablespoon crushed cookies and 2 tablespoons mint flavored whipped topping.

Repeat layers and sprinkle with remaining crushed cookies. Serve at once.
