Avocado Stuffed Baked Potatoes

Ingredients:

  1. 3 large baking potatoes
  2. 1 cup sour cream
  3. 1/2 cup avocado, diced
  4. 2 teaspoons salt
  5. 1 teaspoon pepper
  6. butter
Directions:

Bake potatoes until done. Cut the potatoes in half lengthwise and scoop out insides carefully. Retain skins; whip the potato pulp with sour cream, avocado, salt and pepper. Fill potato skins with whipped potatoes. Add bits of butter on top; bake at 375 degrees for 10 minutes or until lightly browned.
