Southwest Pork Chops With Salsa

Ingredients:

  1. 1/4 cup white wine vinegar
  2. 3 tablespoons fresh cilantro, snipped
  3. 1 teaspoon olive oil
  4. 1 cup frozen whole kernel corn, thawed
  5. 3 plum tomatoes, chopped
  6. 1/2 cup green onions,thinly sliced
  7. 1 jalapeno pepper, seeded and chopped
  8. 4 center cut loin pork chops
Directions:

Combine 3 tablespoons of vinegar, 1 tablespoon of cilantro and olive oil.

In a medium bowl, combine corn, tomatoes, green onions, jalapeno, remaining vinegar and cilantro; set aside.

Grill chops over medium heat for 11-14 minutes, turning once, and marinating with oil and vinegar mixture. Serve with salsa.
