Salsa Potato Salad

Ingredients:

  1. 1/3 cup mayonnaise
  2. 2 tablespoons sour cream
  3. 1/4 cup salsa
  4. 1 tablespoon minced, fresh parsley
  5. 3 cups potatoes, cooked and unpeeled
  6. 1 celery stalk, thinly sliced
  7. 1/4 cup onion, chopped
  8. 1/2 cup cheddar cheese, shredded
Directions:

In a bowl, combine the mayonnaise, sour cream, salsa and parsley.

In a large bowl, combine the potatoes, celery and onion. Add dressing and toss to coat. Stir in cheese.

Cover and refrigerate for at least 1 hour to blend flavors before serving.
