Bean And Rice Burritos

Ingredients:

  1. 1 can (15 ounce) black beans, drained
  2. 1 can (14 ounce) tomatoes, drained and diced
  3. 2 teaspoons garlic powder
  4. 1 teaspoon ground cumin
  5. 2 cups rice, cooked
  6. 12 (7-inch) flour tortillas, warmed
  7. 1 cup (4 ounces) shredded cheese
  8. sour cream
  9. 1-2 jalapeno peppers, chopped
  10. freshly chopped cilantro
Directions:

In a large skillet, combine the beans, tomatoes, jalapeno pepper, garlic powder and cumin; heat through.

Stir in rice. Spoon about 1/3 cup of rice mixture on center of each tortilla. Top with cheese and cilantro. Fold sides and ends over filling and roll up. Drizzle with sour cream.
