Cottage Cheese And Cantaloupe Salad

Ingredients:

  1. 16 ounces low fat, 1% cottage cheese
  2. 1/2 cup raisins
  3. 1/4 cup walnuts, chopped
  4. 1 medium cantaloupe, quartered and seeded
  5. 1/4 cup low fat granola
  6. 2 kiwifruit, peeled and sliced
  7. Leaf lettuce
Directions:

In a bowl, combine cottage cheese, raisins and walnuts; mix well. Spoon into cantaloupe quarters. Sprinkle with granola and top with sliced kiwi. Serve at once on lettuce leaves.
