Chilled Cucumber Soup

Ingredients:

  1. 2 medium cucumbers
  2. 2 cups buttermilk
  3. 1/2 cup sour cream
  4. 1-1/2 teaspoons sugar
  5. 1 teaspoon dill weed
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon pepper
  8. 2 green onions, chopped
Directions:

Cut four thin slices of cucumber; set aside for garnish. Peel and finely chop cucumbers.

In a bowl, combine the buttermilk, sour cream, sugar, dill, salt, pepper, green onions and cucumbers; mix well. Refrigerate overnight to blend flavors. Garnish with cucumber slices before serving.
