Chicken Rice Salad

12 servings

Ingredients:

  1. 5 cups boneless, skinless chicken, cooked and cubed
  2. 3 cups cooked rice
  3. 1-1/2 cups green pepper, diced
  4. 1-1/2 cups celery, sliced
  5. 1 can (20 oz.) pineapple tidbits, drained
  6. 3/4 cup mayonnaise
  7. 4 teaspoons orange juice
  8. 2 teaspoons vinegar
  9. 1 teaspoon salt
  10. 1/2 teaspoon ground ginger
  11. 1/4 teaspoon garlic salt
  12. 1 can (15 oz.) mandarin oranges, drained
  13. 1 cup slivered almonds, toasted
Directions:

In a large bowl, combine chicken, rice, green pepper, celery and pineapple.

In a small bowl, combine mayonnaise, orange juice, vinegar, salt, ginger and garlic salt. Pour over salad and toss. Refrigerate.

Just before serving, fold in the oranges and almonds.
