Vinaigrette Coleslaw

Ingredients:

  1. 3 tablespoons vinegar
  2. 3 tablespoons salad oil
  3. 2 tablespoons sugar
  4. 1/4 teaspoon dry mustard
  5. 1/2 teaspoon caraway seeds
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon pepper
  8. 3 cups green cabbage, finely shredded
  9. 1 cup carrot, finely shredded
  10. 1/4 cup green onions, cut into thin lengthwise slices
Directions:

Combine vinegar, oil, sugar, caraway seeds, salt, and pepper in a screw-top jar. Cover and shake well.

In a large bowl, combine the cabbage, carrot, and green onion. Pour vinegar mixture over cabbage mixture; toss gently to coat.

Cover and chill before serving, if desired.
