Red Lentils

Yield:
3 cups

Ingredients:

  1. 1/2 lb. red lentils (Egyptian)
  2. 2 cups water
  3. 1/2 cup low-sodium chicken broth
  4. 1/4 teaspoon salt
Directions:

Rinse and drain lentils. In a 2-quart saucepan, bring the water, the chicken broth, and salt just to boiling; stir in lentils. Simmer lentils, covered, in the salt water mixture for 30 minutes or until soft. Drain any excess liquid.
