Apricot Honey Oat Bar Cookies

Makes 8 servings (2 cookies each)

Preparation Time:
20 minutes; Cook: 25 minutes

Ingredients:

  1. 1-1/2 cups old-fashioned rolled oats ( uncooked )
  2. 1/2 cup finely chopped dried apricots
  3. 1/2 cup honey
  4. 1/4 cup nonfat plain yogurt
  5. 2 large egg whites
  6. 2 tablespoons wheat germ
  7. 2 tablespoons flour
  8. 3 tablespoons margarine, melted
  9. 1/2 teaspoon cinnamon
  10. 1/2 teaspoon vanilla
  11. 1/4 teaspoon salt
Directions:

Preheat oven to 325 F. Spray 8-inch square baking pan with non-stick cooking spray.

In large bowl, combine all ingredients; mix to blend. Turn mixture out into prepared pan, smooth evenly. Bake until center is firm and edges are lightly browned, about 25 minutes. Cool and cut into 2-inch squares.
