Ham And Corn Frittata

Ingredients:

  1. 8 eggs
  2. 1/2 cup whole kernel corn
  3. 2 tablespoons fresh chives
  4. 2 tablespoons fresh parsley
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon pepper
  7. 1/2 cup fully cooked ham, diced
  8. 1 tablespoon butter
Directions:

In medium bowl combine cheese, corn, chives, parsley, salt and pepper. Beat with fork until well mixed. Stir in ham.

Melt butter in 10-inch skillet over medium low heat. Pour mixture into skillet. Cover and cook 14-17 minutes or until eggs are set in center and light brown on bottom. Turn upside down on serving plate.
