Breakfast Burritos

Ingredients:

  1. 1 cup frozen hash browns, shredded
  2. 1/4 cup onion, chopped
  3. 2 teaspoons butter
  4. 4 eggs, well beated
  5. 1/4 teaspoon salt
  6. 1/4 teaspoon pepper
  7. 6 (8 inch) flour tortillas, warmed
  8. 1/2 cup cheddar cheese, shredded
Directions:

In a large skillet over medium heat, saute potato and onion in butter until tender. Pour beaten eggs into skillet; sprinkle with salt and pepper. Cook, stirring often, until mixture is set.

Divide mixture evenly between tortillas; top with cheese. Fold tortillas over egg mixture and serve at once.
