Chicken Salad Wrap

Ingredients:

  1. 3 10-inch, low carb multi-grain tortillas
  2. 1 lb. chicken breast - boneless, skinless, poached
  3. 1 celery stalk, chopped
  4. 3 tablespoons mayonnaise
  5. 1 teaspoon Dijon mustard
  6. 1 tablespoon fresh parsley, chopped
  7. 3 whole lettuce leaves
Directions:

Cut chicken into small cubes. Mix celery, mayonnaise, mustard and parsley in a bowl. Add chicken; toss to coat. Place tortillas on a flat surface, lay one whole lettuce leaf on each wrap with 1/3 salad mix on each.

Roll and serve.
