Chicken Salad and Apple Croissants

Yield:
8 servings

Ingredients:

  1. 10 ounces cooked chicken, shredded
  2. 1 apple, cored and cut into thin slices
  3. 1/3 cup mayonnaise
  4. 1/2 cup green grapes, quartered
  5. 1/4 cup sliced almonds, toasted
  6. 1/8 teaspoon salt
  7. 1/4 teaspoon freshly ground pepper
  8. 8 croissants or potato rolls, split lengthwise but not cut all the way through
  9. romaine lettuce
  10. 1/2 cup celery, chopped
  11. 1/3 cup plain yogurt
  12. 1 can lemon lime soda
Directions:

In a large mixing bowl stir mayonnaise, yogurt, pepper and salt to combine.

Add grapes, celery, almonds and chicken and stir to combine.

Place sliced apples into a glass filled with lemon lime soda to prevent browning. Pat dry before placing in sandwich.

Open croissant and layer with lettuce, apple slices, 1/3 cup chicken salad and more lettuce.
