Sweet Potato Chicken Salad

Ingredients:

  1. 3 cups boneless, skinless chicken breasts, cooked
  2. 1 lb. small red potatoes, cooked and cubed
  3. 1 lb. sweet potatoes, cooked, peeled and cubed
  4. 1 pkg. (16 oz.) frozen cut green beans, cooked and drained
  5. 1/2 cup mayonnaise
  6. 1/2 cup plain fat-free yogurt
  7. 2 tablespoons milk
  8. 2 teaspoons dill weed
  9. 1/2 teaspoon salt
  10. 1/8 teaspoon pepper
  11. Optional:
  12. toasted pecans
Directions:

In a large bowl, combine chicken, potatoes and green beans.

In another bowl, combine mayonnaise, yogurt, milk, dill weed, salt and pepper. Pour mayonnaise mixture over chicken mixture; stir gently to coat evenly. Cover and refrigerate at least 30 minutes.

Sprinkle with pecans if desired.
