Speedy Chicken Salad

Yield:
2-3 servings

Ingredients:

  1. 9 oz. frozen, fully cooked, chicken breasts, diced
  2. 1/4 cup mayonnaise
  3. 1/4 cup celery, thinly sliced
  4. 1/4 cup grapes, red or green seedless, halved
  5. 2 tablespoons pecan pieces
  6. salt, to taste
  7. pepper, to taste
  8. Optional:
  9. lettuce leaves
  10. crackers
Directions:

In a large bowl, combine all ingredients except lettuce and crackers; mix well. Refrigerate until cold.

Place lettuce leaves on individual plates; scoop chicken mixture onto lettuce. Serve with assorted crackers if desired. Refrigerate leftovers immediately.
