Classic Chicken Puffs

Ingredients:

  1. 1 pkg. (6 oz.) long grain and wild rice
  2. 2 cups boneless, skinless chicken breasts, cooked and cubed
  3. 1/2 can (10-3/4 oz.) condensed cream of mushroom soup, undiluted
  4. 1/3 cup green onions, chopped
  5. 1/3 cup diced pimento or diced sweet red pepper
  6. 1/3 cup diced celery
  7. 1/3 cup fresh parsley, chopped
  8. 1/3 cup chopped slivered almonds
  9. 1/4 cup milk
  10. 1 pkg. (10 oz.) frozen puff pastry shells, thawed
Directions:

Prepare rice according to package directions. When rice is done, add remaining ingredients (except pastry shells). Mix well. Reheat 1 minute. Fill pastry shells with rice mixture.

Serve with a mixed green salad and balsamic vinaigrette if desired. Refrigerate leftovers immediately.
