Roasted Garlic Potato Soup

Ingredients:

  1. 4 medium red potatoes, cubed
  2. 2 medium carrots, diced
  3. 1 medium onion, chopped
  4. 1 stalk celery, chopped
  5. 2 strips bacon, cooked and crumbled
  6. 2 cans (14 oz. each) chicken broth, seasoned with roasted garlic
  7. 1 cup milk
  8. 1 cup instant mashed potato flakes or buds
  9. 1 tablespoon fresh parsley, chopped
Directions:

Place potatoes, carrots, onion, celery, bacon and broth in saucepan. Heat to a boil. Cover and cook over low heat 15 minutes or until tender. Remove from heat.

Stir in milk, potato flakes and parsley. Heat through.
