Potato Sausage Skillet

Ingredients:

  1. 3 tablespoons vegetable oil
  2. 1 pkg. (24oz.) frozen diced potatoes with onions and peppers
  3. 1/2 teaspoon dried oregano or basil leaves
  4. 1/2 teaspoon pepper
  5. 2 cups broccoli flowerets
  6. 1 lb. smoked sausage, cut into rings
  7. 4 ounces sharp cheddar cheese, shredded
Directions:

Heat oil in large skillet over medium high heat. Add potatoes, oregano and pepper. Cover and cook 8-10 minutes, stirring occasionally, until potatoes are light brown.

Stir in broccoli; add sausage. Cover and cook about 15 minutes or until sausage is hot. Top with cheese. Cover and heat until cheese is melted.
