Chicken Dijon Salad

A low carb recipe

Ingredients:

  1. 1/4 cup mayonnaise
  2. 1/4 cup sour cream
  3. 1 tablespoon lemon juice
  4. 1 teaspoon sugar
  5. 1 teaspoon lemon peel, grated
  6. 1 teaspoon Dijon mustard
  7. 1/2 teaspoon salt
  8. 1/2 teaspoon pepper
  9. 2 cups cooked chicken, diced
  10. 1 cup celery, sliced
  11. 1/4 cup green onions, sliced
  12. lettuce leaves
  13. crumbled blue cheese for garnish
Directions:

Combine mayonnaise, sour cream, lemon juice, sugar, lemon peel, mustard, salt and pepper in large bowl. Add chicken, celery and green onions; stir to combine.

Cover and refrigerate at least 1 hour to allow flavors to blend. Serve salad on lettuce lined plate. Sprinkle with blue cheese.
