Nutty Pan-Fried Trout

Ingredients:

  1. 2 tablespoons oil
  2. 4 (6 oz. each) trout fillets
  3. 1/2 cup seasoned bread crumbs
  4. 1/2 cup pine nuts
Directions:

Heat oil in large skillet over medium heat. Lightly coat fish with crumbs. Add to skillet. Cook 8 minutes or until fish flakes easily when tested with fork, turning after 5 minutes.

Remove fish from skillet. Place on serving platter; keep warm.

Add nuts to drippings in skillet. Cook and stir 3 minutes more or until nuts are lightly toasted. Sprinkle over fish.
