Chicken Pasta Salad with Nectarines and Grapes

Ingredients:

  1. nonstick cooking spray
  2. 4 boneless chicken breast halves
  3. 1 cup uncooked pasta shells
  4. 1/2 cup mayonnaise
  5. 1/2 cup plain yogurt
  6. 2 Tablespoons lime juice
  7. 1 Tablespoon brown sugar
  8. 1 teaspoon dry mustard
  9. 1 teaspoon ground ginger
  10. 3 nectarines, coarsely chopped
  11. 1 cup green grapes
  12. Lettuce leaves, if desired
Directions:

Spray medium nonstick skillet with cooking spray. Heat over medium heat until hot. Add chicken. Cook 3 minutes each side or until chicken is no longer pink inside. Remove from skillet; refrigerate 10 minutes. Cut into cubes.

Cook pasta according to package directions, omitting salt; drain. Rinse with cold water; drain.

Combine mayonnaise, yogurt, lime juice, brown sugar, mustard and ginger in small bowl. Add chicken, pasta, nectarines and grapes; toss until coated with dressing.

Serve on lettuce leaves, if desired.
