Pumpkin Spice Cookies

Yield:
2 1/2 dozen

Ingredients:

  1. 1 package yellow cake mix
  2. 1 teaspoon cinnamon
  3. 1 cup canned solid pack pumpkin (not pumpkin pie mix)
  4. 1/4 cup butter, softened
  5. 1/2 cup raisins, if desired
  6. 1 container vanilla ready-to-spread frosting
  7. 1 teaspoon nutmeg
Directions:

Heat oven to 375 degrees F

Stir cake mix (dry), cinnamon and nutmeg in large bowl. Mix in canned pumpkin and butter until well blended. Stir in raisins.

Drop dough by generous tablespoonfuls about 2-inches apart onto cookie sheet.

Bake 11 to 12 minutes or until set and light golden brown around edges. Cool 1 to 2 minutes. Remove from cookie sheet to wire rack. Cool completely, about 30 minutes.

Top with frosting.
