TNT Tilapia

Ingredients:

  1. 1 pound tilapia fillets
  2. 2 tablespoons all purpose flour
  3. 2 tablespoons cornmeal
  4. 1 tablespoon chili powder
  5. 2 teaspoons ground cumin
  6. 2 teaspoons cayenne pepper
  7. 1/2 teaspoon salt
  8. 1/2 teaspoon paprika
  9. 1/2 teaspoon black pepper
  10. 3 tablespoons olive oil
  11. freshly sliced lemon
Directions:

Pat fish dry with paper towels, cut into 4 serving size pieces and set aside.

In a shallow dish, stir together flour, cornmeal, chili powder, cumin, cayenne pepper, paprika, black pepper and salt. One at a time, dip each piece of fish into the flour mixture and turn to coat the entire outer surface.

In a large skillet, heat the oil over medium heat. Cook fish in oil for 4 to 6 minutes or until fish flakes easily with a fork, turning once. Fillets are done when they turn golden brown.

Pat fillets on paper towels to absorb extra oil.

Serve immediately with freshly sliced lemons.
