Scalloped Squash and Apples

Ingredients:

  1. 2 pounds butternut squash, peeled, seeded and cut into 1-inch pieces
  2. 2 large apples, peeled and cut into 1-inch pieces
  3. 1/4 cup brown sugar
  4. 2 Tablespoons honey
  5. 2 Tablespoons orange juice
  6. 1 Tablespoon butter, melted
  7. 2 teaspoons orange zest
  8. 1/2 teaspoon salt
Directions:

Preheat oven to 350 degrees F

Layer squash and apples in an 11 x 7 x 2- inch baking dish coated with nonstick cooking spray.

In a bowl, combine brown sugar, honey, orange juice, butter, orange zest and salt . Pour over squash and apples.

Cover and bake for 35 to 40 minutes or until tender.
