Gruyere Dessert Quesadillas

Yield:
6 (2 wedge) servings

Ingredients:

  1. 6 (6 inch) flour tortillas
  2. Cooking spray
  3. 1/2 cup (2 ounces) Gruyere or Swiss cheese, shredded
  4. 1 package (3 ounce) cream cheese, softened
  5. 1/4 cup apricot preserves
  6. 2 ounces (1.55 oz.) milk chocolate bar, broken into pieces
Directions:

Lightly spray one side of each tortilla with cooking spray. Stir together shredded Gruyere (or Swiss) cheese and cream cheese; spread evenly over the unsprayed sides of three tortillas.

Top with preserves and chocolate pieces. Top with remaining tortillas, sprayed sides up.

Heat a heavy skillet or griddle over medium heat. Cook quesadillas, one at a time, about 1 to 2 minutes per side or until chocolate melts. Cut each quesadilla into four wedges.
