Italian Sausage and Peppers

Ingredients:

  1. 3 pounds Italian sausage links, cut into 3/4- inch slices
  2. 4 medium green peppers, cut into thin strips
  3. 1 medium onion, thinly sliced and quartered
  4. 1 Tablespoon butter
  5. 1 Tablespoon olive oil
  6. 3 Tablespoons chicken broth
  7. 6 plum tomatoes, chopped
  8. 1 Tablespoon fresh minced parsley
  9. 1/4 teaspoon salt
  10. 1/4 teaspoon pepper
  11. 1/2 teaspoon lemon juice
Directions:

In a Dutch oven, cook the sausage over medium heat until no longer pink; drain.

Add the remaining ingredients; stir. Cover and cook for 30 minutes or until vegetables are tender, stirring occasionally.

Serve with slotted spoon.
