Springtime Rice

Ingredients:

  1. 1/4 cup olive oil
  2. 1 clove garlic, minced
  3. 1 bunch asparagus spears, cut into 1-inch pieces
  4. 3 Portobello mushrooms, cut into small strips
  5. 1 red bell pepper, chopped
  6. 3 cups cooked rice
  7. 1/2 cup grated Asiago cheese
Directions:

Heat oil in large skillet. Add garlic, asparagus, mushrooms and pepper; cook over medium high heat for 5-10 minutes, stirring
frequently, until vegetables are tender. Add rice and cheese. Stir until well blended; heat thoroughly.
