Orange and Honey Mustard Roasted Vegetables

Ingredients:

  1. 1 small green bell pepper, cut in strips
  2. 1 small red bell pepper, cut in strips
  3. 1 small red onion, cut in strips
  4. 1 small zucchini, cut in 1/2 inch chunks
  5. 1 cup baby carrots
  6. 2 Tablespoons olive oil
  7. 4 cloves garlic, sliced in half
  8. 1/4 cup honey mustard
  9. 2 Tablespoons orange juice
  10. 1 teaspoon grated orange peel
  11. 3 cups cooked pasta (prepared according to package directions)
Directions:

Preheat oven to 450 degrees F

Toss vegetables with oil and garlic in roasting pan. Bake for 20 minutes or until tender.

In the meantime, stir together honey mustard, orange juice and orange peel; toss with vegetables just before serving. Serve over hot cooked pasta.
