Taco Soup

Yield:
6 servings

Ingredients:

  1. 1 pound ground beef
  2. 1/2 cup chopped green pepper
  3. 1/2 cup chopped onion
  4. 1 package taco seasoning mix
  5. 4 cups vegetable juice cocktail
  6. 1 cup chunky salsa
  7. Shredded cheddar cheese
  8. 1 Tablespoon olive oil or vegetable oil
  9. Toppings:
  10. Sour cream
  11. Tortilla chips
Directions:

Heat oil in Dutch oven over medium heat; brown ground beef and drain.

Add onion and green pepper and cook, stirring occasionally.

Stir in seasoning mix; continue cooking 1 minute.

Stir in vegetable juice and salsa. Continue cooking, stirring occasionally, until heated through.

To serve, spoon soup into serving bowls and add desired toppings.
