Denver Omelet Pie

Ingredients:

  1. 6 eggs
  2. 1/2 teaspoon minced onion
  3. 1/2 teaspoon thyme
  4. 1/2 teaspoon salt
  5. 1/2 teaspoon pepper
  6. 3 cups frozen shredded hash brown potatoes
  7. 1 cup shredded Swiss cheese
  8. 1/2 cup cooked, diced ham
  9. 1/2 cup chopped green pepper
  10. 1 medium tomato, thinly sliced
Directions:

In a large bowl, beat eggs, thyme, salt and pepper. Stir in the potatoes, onion, cheese, ham and green pepper. Pour into a greased 9-inch pie plate.

Bake at 350 degrees for 40-45 minutes or until knife inserted in center comes out clean. Garnish with tomato slices.
