Glazed Cherry Pie

Yield:
6-8 servings

Ingredients:

  1. 1 pkg. (3 oz.) cherry gelatin
  2. 2/3 cup boiling water
  3. 4 cups fresh, pitted cherries, divided
  4. 1 cup sugar
  5. 1 9-inch pastry shell
Directions:

In a bowl, combine gelatin and boiling water until dissolved.

In a saucepan, combine 2 cups cherries and sugar; mash cherries. Bring to a boil; cook and stir for 2 minutes. Stir in gelatin mixture. Remove from heat.

Cut remaining cherries in half; place in crust. Gradually pour hot mixture over top. Chill for at least 4 hours before cutting.
