Stuffed Peach Halves

Ingredients:

  1. 4 medium peaches, peeled, halved and pit removed
  2. 1 tablespoon lemon juice
  3. 2 tablespoons unsweetened flaked coconut, toasted
  4. 2 tablespoons raisins
  5. 1/2 teaspoon grated lemon rind
  6. 1/2 teaspoon ground cinnamon
  7. 2 tablespoons lowfat vanilla yogurt
  8. 2 teaspoons honey
  9. 1 teaspoon vanilla extract
Directions:

Coat peach halves with lemon juice and set aside.

Combine remaining ingredients; stir well. Spoon mixture into cavity of each peach half. Chill.
