Smoked Salmon Crostini

Ingredients:

  1. 1/4 cup olive oil, divided
  2. 1/4 pound smoked salmon, thinly sliced
  3. 1 shallot, minced
  4. 2 Tablespoons fresh chives, minced
  5. 2 Tablespoons fresh dill, minced
  6. 1/4 teaspoon freshly ground pepper
  7. 1/2 teaspoon grated lemon rind
  8. 1 Tablespoon fresh lemon juice
  9. 1 Tablespoon coarsely chopped capers
  10. 1 French baguette, cut crosswise into 24 (1/2- inch) slices
Directions:

Combine 2 tablespoons olive oil, salmon, shallots, chives, dill, pepper, lemon rind, lemon juice and capers; cover and chill 2 hours.

Brush both sides of each baguette slice with remaining 2 Tbsp oil. Toast bread until golden and crisp, about 3 minutes.

Spoon salmon mixture onto slices; serve immediately.
